For the Sauce:
- ½ cup mayonnaise
- 1 chipotle chile, minced
- 1 teaspoon gochujang
- ½ teaspoon garlic powder
- Black pepper (to taste)
For the Katsu Bites:
- 4 thin-cut chicken breasts (cut into 1-inch cubes)
- Kosher salt and black pepper
- ½ cup all-purpose flour
- 2 large eggs (whisked)
- 2½ cups panko breadcrumbs
- Vegetable oil for frying
Instructions
- Prepare the sauce by whisking all ingredients together in a small bowl. Refrigerate until serving.
- Season chicken cubes with salt and pepper. Set up a breading station with bowls for flour, eggs, and panko.
- Coat chicken pieces in flour, then egg, then panko.
- Heat oil in a skillet over medium heat. Fry chicken in batches for 4 minutes or until golden and cooked through.
- Serve with the chipotle-gochujang sauce.
