For the Sauce:

  • ½ cup mayonnaise
  • 1 chipotle chile, minced
  • 1 teaspoon gochujang
  • ½ teaspoon garlic powder
  • Black pepper (to taste)

For the Katsu Bites:

  • 4 thin-cut chicken breasts (cut into 1-inch cubes)
  • Kosher salt and black pepper
  • ½ cup all-purpose flour
  • 2 large eggs (whisked)
  • 2½ cups panko breadcrumbs
  • Vegetable oil for frying

Instructions

  • Prepare the sauce by whisking all ingredients together in a small bowl. Refrigerate until serving.
  • Season chicken cubes with salt and pepper. Set up a breading station with bowls for flour, eggs, and panko.
  • Coat chicken pieces in flour, then egg, then panko.
  • Heat oil in a skillet over medium heat. Fry chicken in batches for 4 minutes or until golden and cooked through.
  • Serve with the chipotle-gochujang sauce.
