- 12 large eggs (hard-boiled & peeled)
- 1 cup mayonnaise
- 1 ½ tsp rice vinegar
- ¾ tsp ground mustard powder
- ½ tsp sugar
- 2 jalapeños (seeded & finely diced)
- 6 slices turkey bacon (cooked & crumbled)
- Paprika (for garnish)
Instructions
- Place eggs in a pot, cover with water, bring to a boil, then turn off the heat and let sit for 10-12 minutes.
- Transfer eggs to an ice bath for 5 minutes, then peel.
- Slice eggs lengthwise, remove yolks, and mash them in a bowl.
- Add mayonnaise, rice vinegar, mustard powder, and sugar; mix well.
- Stir in diced jalapeños and crumbled turkey bacon.
- Fill egg whites with the yolk mixture using a spoon or piping bag.
- Garnish with paprika and refrigerate for at least 30 minutes before serving.
Notes
- For a milder flavor, remove all jalapeño seeds.
- Use a food processor for an extra creamy filling.
- Make ahead and store in the fridge for up to 2 days.
