  • 2 slices lemon cake (homemade or store-bought, no icing)
  • 1 cup fresh raspberries
  • 1 tablespoon sugar
  • 1 teaspoon freshly squeezed lemon juice
  • 1 cup whipped cream (homemade preferred)
  • 1 teaspoon raspberry liqueur or Limoncello (optional)

Instructions

  • Reserve whole raspberries for garnish. Crush the remaining raspberries with sugar and lemon juice; let sit for 10 minutes.
  • Break lemon cake into small pieces and layer in glasses. Drizzle with liqueur, if using.
  • Add crushed raspberries, then a layer of whipped cream. Repeat layers, ending with cream.
  • Garnish with whole raspberries. Refrigerate for 30 minutes before serving.
