For the Buttermilk Biscuits:
- 2½ cups all-purpose flour
- 1 tablespoon baking powder
- 1 teaspoon salt
- ½ cup (1 stick) cold unsalted butter, cubed
- 1 cup cold buttermilk
For the Hot Honey:
- ½ cup honey
- 2–3 tablespoons hot sauce (adjust to taste)

Instructions
- Prepare Biscuits:
- Preheat oven to 425°F (220°C).
- In a large bowl, whisk flour, baking powder, and salt.
- Cut in cold butter until mixture resembles coarse crumbs.
- Add buttermilk and stir gently until just combined.
- Roll and fold dough, then cut into rounds and bake for 13–15 minutes.
- Prepare Fried Chicken:
- Combine flour, salt, pepper, garlic powder, and paprika in a bowl.
- In another bowl, whisk egg and water.
- Dredge chicken in flour, then egg mixture, then flour again.
- Fry in hot oil (365–375°F) for 3–4 minutes per side.
- Prepare Hot Honey:
- Heat honey and hot sauce in a small saucepan over low heat, stirring to combine.
- Assemble Biscuits:
- Split warm biscuits.
- Layer fried chicken, drizzle with hot honey, and add pickles if desired.
