Description

Ingredients

2 lbs chicken wings (party wings, patted dry)

½ tsp garlic powder

2 tsp baking powder

¾ tsp five-spice powder

¾ tbsp ground cumin

¾ tbsp ground coriander

½ tsp brown sugar

2 tbsp vegetable or canola oil (plus more for grilling)

1 tbsp whole black peppercorns, crushed

2 tsp kosher salt
Instructions

Mix all dry rub ingredients and oil in a bowl.

Coat wings thoroughly with the rub.

Marinate on a wire rack in the fridge for at least 8 hours.

Let wings sit at room temp for 15 minutes before grilling.

Preheat grill to medium heat and oil the grates.

Grill wings, flipping every 5 minutes for 20–25 minutes or until internal temp reaches 165°F.

Rest wings for 5 minutes before serving.
