Grilled Chicken Skewers with Tzatziki – Easy and Healthy Recipe

Description

These juicy grilled chicken skewers are marinated in lemon, yogurt, and Mediterranean spices, then paired with a refreshing homemade tzatziki sauce. It’s a light, protein-packed dish that’s perfect for weeknight dinners, BBQs, or meal prep.

For the Tzatziki:

  • ½ European cucumber, diced

  • 1 Tbsp extra-virgin olive oil

  • 2 Tbsp lemon juice

  • Salt and freshly ground black pepper, to taste

  • 1 cup Greek yogurt

  • ½ tsp garlic powder

  • 1 Tbsp chopped fresh dill

For the Skewers:

  • Zest and juice of 1 lemon

  • lbs boneless, skinless chicken breast, cut into ½-inch strips

  • 1 Tbsp Greek yogurt

  • 1 tsp dried oregano

  • ½ tsp garlic powder

  • Pinch of cayenne pepper

  • Extra-virgin olive oil, as needed

  • Salt and freshly ground black pepper, to taste

  • ¼ cup chopped fresh parsley, for garnish


Instructions

  • In a bowl, mix yogurt, cucumber, olive oil, lemon juice, garlic powder, dill, salt, and pepper. Chill.

  • In another bowl, mix yogurt, lemon zest/juice, oregano, garlic powder, and cayenne.

  • Toss chicken with marinade, cover, and chill 30 mins to 2 hours.

  • Thread chicken onto skewers.

  • Heat grill or grill pan to medium-high. Brush skewers with olive oil, season, and grill 4–5 mins per side.

  • Garnish with parsley and serve with chilled tzatziki.

Notes

  • Soak wooden skewers in water for 30 minutes to prevent burning.

  • Let chicken come to room temp before grilling for even cooking.

  • Drain cucumber before mixing tzatziki to prevent a watery sauce.
