These juicy grilled chicken skewers are marinated in lemon, yogurt, and Mediterranean spices, then paired with a refreshing homemade tzatziki sauce. It’s a light, protein-packed dish that’s perfect for weeknight dinners, BBQs, or meal prep.
Ingredients
For the Tzatziki:

½ European cucumber, diced

1 Tbsp extra-virgin olive oil

2 Tbsp lemon juice

Salt and freshly ground black pepper, to taste

1 cup Greek yogurt
-
½ tsp garlic powder
-
1 Tbsp chopped fresh dill
For the Skewers:

Zest and juice of 1 lemon

1½ lbs boneless, skinless chicken breast, cut into ½-inch strips

1 Tbsp Greek yogurt

1 tsp dried oregano
-
½ tsp garlic powder
-
Pinch of cayenne pepper

Extra-virgin olive oil, as needed

Salt and freshly ground black pepper, to taste

¼ cup chopped fresh parsley, for garnish
Instructions

In a bowl, mix yogurt, cucumber, olive oil, lemon juice, garlic powder, dill, salt, and pepper. Chill.

In another bowl, mix yogurt, lemon zest/juice, oregano, garlic powder, and cayenne.

Toss chicken with marinade, cover, and chill 30 mins to 2 hours.

Thread chicken onto skewers.

Heat grill or grill pan to medium-high. Brush skewers with olive oil, season, and grill 4–5 mins per side.

Garnish with parsley and serve with chilled tzatziki.
Notes

Soak wooden skewers in water for 30 minutes to prevent burning.

Let chicken come to room temp before grilling for even cooking.

Drain cucumber before mixing tzatziki to prevent a watery sauce.
