Ingredients

1½ lbs chicken breast, halved

3 tbsp lemon juice

1 tbsp white wine vinegar

2 tbsp dried oregano

1 tsp garlic powder

½ tsp thyme

1 tsp kosher salt

½ tsp black pepper

2 tsp olive oil (for cooking)

2 cups chopped cucumber

4 Roma tomatoes, chopped

23 kalamata olives, halved
-
¼ small red onion, diced

½ cup feta cheese, crumbled

1 tbsp olive oil
-
2 tbsp white wine vinegar
-
1 tsp oregano
-
1 tsp garlic powder
-
¼ tsp dried dill
-
2 cups cooked white rice

Salt & pepper to taste
Instructions

Marinate chicken in lemon juice, vinegar, spices, salt, and pepper for 30 minutes to 8 hours.

Cook chicken in a skillet with olive oil for 4–5 minutes per side. Rest, then slice.

Combine cucumbers, tomatoes, olives, onion, feta, olive oil, vinegar, and spices for the salad. Chill.

Cook rice in broth (optional) and season to taste.

Assemble bowls with rice, salad, and sliced chicken. Garnish with extra feta.
