For the Crust:

  • 1½ cups graham cracker crumbs
  • ¼ cup granulated sugar
  • ½ cup unsalted butter, melted

For the Filling:

  • 24 oz (3 packages) cream cheese, softened
  • 1 cup granulated sugar
  • 3 large eggs
  • 1 cup sour cream
  • 1 teaspoon vanilla extract
  • Black food coloring (gel or powder), as needed

For the Topping:

  • 1½ cups fresh or frozen blueberries
  • ¼ cup granulated sugar
  • 1 tablespoon lemon juice
  • 1 tablespoon cornstarch mixed with 2 tablespoons water (slurry)

Instructions

  1. Prepare the Crust:
    • Preheat oven to 325°F (163°C).
    • Mix graham cracker crumbs, sugar, and melted butter. Press into a 9-inch springform pan and bake for 10 minutes. Cool.
  2. Prepare the Filling:
    • Beat cream cheese until smooth. Gradually add sugar.
    • Mix in eggs, one at a time, then sour cream and vanilla.
    • Add black food coloring to achieve the desired color.
  3. Bake the Cheesecake:
    • Pour filling over the cooled crust. Place pan on a baking sheet.
    • Bake for 55–65 minutes at 325°F (163°C) until the center is set but slightly jiggly. Cool in the oven with the door ajar for 1 hour.
  4. Make the Topping:
    • Cook blueberries, sugar, and lemon juice over medium heat until juices release. Add cornstarch slurry and cook until thickened. Cool.
  5. Chill and Serve:
    • Spread cooled topping over cheesecake. Refrigerate for at least 4 hours before serving.
