For the Crust:
- 1½ cups graham cracker crumbs
- ¼ cup granulated sugar
- ½ cup unsalted butter, melted

- 24 oz (3 packages) cream cheese, softened
- 1 cup granulated sugar
- 3 large eggs
- 1 cup sour cream
- 1 teaspoon vanilla extract
- Black food coloring (gel or powder), as needed
For the Topping:
- 1½ cups fresh or frozen blueberries
- ¼ cup granulated sugar
- 1 tablespoon lemon juice
- 1 tablespoon cornstarch mixed with 2 tablespoons water (slurry)
Instructions
- Prepare the Crust:
- Preheat oven to 325°F (163°C).
- Mix graham cracker crumbs, sugar, and melted butter. Press into a 9-inch springform pan and bake for 10 minutes. Cool.
- Prepare the Filling:
- Beat cream cheese until smooth. Gradually add sugar.
- Mix in eggs, one at a time, then sour cream and vanilla.
- Add black food coloring to achieve the desired color.
- Bake the Cheesecake:
- Pour filling over the cooled crust. Place pan on a baking sheet.
- Bake for 55–65 minutes at 325°F (163°C) until the center is set but slightly jiggly. Cool in the oven with the door ajar for 1 hour.
- Make the Topping:
- Cook blueberries, sugar, and lemon juice over medium heat until juices release. Add cornstarch slurry and cook until thickened. Cool.
- Chill and Serve:
- Spread cooled topping over cheesecake. Refrigerate for at least 4 hours before serving.
