- 1½ cups light brown sugar, packed
- 2 large eggs, room temperature
- 2 tablespoons molasses
- 1 teaspoon vanilla extract
- 2½ cups all-purpose flour
- 1 tablespoon ground ginger
- 2 teaspoons ground cinnamon
- 1 teaspoon baking powder
- ½ teaspoon kosher salt
- Confectioners’ sugar (optional for dusting)
Instructions
- Preheat oven to 350°F (175°C). Line a 9×9-inch baking dish with parchment paper.
- Mix melted butter and brown sugar until smooth. Add eggs, molasses, and vanilla; stir to combine.
- In a separate bowl, whisk flour, ginger, cinnamon, baking powder, and salt.
- Gradually add dry ingredients to the wet mixture. Mix until just combined.
- Spread batter evenly in the prepared baking dish.
- Bake for 30–35 minutes or until a toothpick inserted in the center comes out with a few crumbs.
- Cool completely, then cut into squares. Dust with confectioners’ sugar if desired.
