  • 4 boneless, skinless chicken breasts
  • 1.5 lbs baby potatoes, halved
  • 3 tbsp olive oil
  • 4 cloves garlic, minced
  • ½ cup grated Parmesan cheese
  • 1 tsp Italian seasoning
  • ½ tsp paprika
  • ½ tsp salt
  • ½ tsp black pepper
  • 1 tbsp butter, melted
  • Fresh parsley, chopped (for garnish)

Instructions

  • Preheat oven to 400°F (200°C) and prepare a baking sheet.
  • Toss potatoes with olive oil, garlic, salt, pepper, and half the Parmesan.
  • Coat chicken with olive oil, garlic, Italian seasoning, paprika, salt, and pepper.
  • Arrange potatoes and chicken on the baking sheet. Drizzle with melted butter.
  • Bake for 20 minutes, sprinkle with remaining Parmesan, then bake for 10-15 minutes more.
  • Garnish with fresh parsley and serve hot.
