- 1.5 lbs baby potatoes, halved
- 3 tbsp olive oil
- 4 cloves garlic, minced
- ½ cup grated Parmesan cheese
- 1 tsp Italian seasoning
- ½ tsp paprika
- ½ tsp salt
- ½ tsp black pepper
- 1 tbsp butter, melted
- Fresh parsley, chopped (for garnish)
Instructions
- Preheat oven to 400°F (200°C) and prepare a baking sheet.
- Toss potatoes with olive oil, garlic, salt, pepper, and half the Parmesan.
- Coat chicken with olive oil, garlic, Italian seasoning, paprika, salt, and pepper.
- Arrange potatoes and chicken on the baking sheet. Drizzle with melted butter.
- Bake for 20 minutes, sprinkle with remaining Parmesan, then bake for 10-15 minutes more.
- Garnish with fresh parsley and serve hot.
