  • 1 lb boneless, skinless chicken breasts (cut into bite-sized pieces)
  • 1 lb potato gnocchi
  • 6 cloves garlic (minced)
  • 1 cup heavy cream
  • 1 cup chicken broth
  • ½ cup grated Parmesan cheese
  • 2 tbsp olive oil
  • 1 tsp dried Italian herbs
  • Salt and black pepper (to taste)
  • Fresh basil leaves (for garnish)

Instructions

  • Heat olive oil in a skillet over medium-high heat. Add chicken, season with salt, pepper, and Italian herbs, and cook until golden brown. Remove and set aside.
  • In the same skillet, sauté minced garlic for 30 seconds.
  • Pour in chicken broth, scrape up any browned bits, and bring to a simmer.
  • Add gnocchi and cook for 3-4 minutes until softened.
  • Reduce heat, pour in heavy cream, and simmer for 2 minutes.
  • Stir in Parmesan cheese, return the chicken to the skillet, and mix well.
  • Garnish with fresh basil and extra Parmesan before serving.

Notes

  • For a lighter version, substitute heavy cream with half-and-half.
  • Add spinach, mushrooms, or sun-dried tomatoes for extra flavor.
  • If you like spice, add red pepper flakes.
