- 2 large chicken breasts, cubed
- ½ teaspoon salt
- ¼ teaspoon black pepper
- 1 teaspoon garlic powder
- 2 tablespoons butter
- 4 cloves garlic, minced
- ½ cup onion, finely chopped
- 16 oz gnocchi
- 1 cup chicken broth
- 1 cup heavy cream
- ½ cup Parmesan cheese, grated
- 1 teaspoon Italian seasoning
- 1 cup fresh spinach (optional)
- 1 tablespoon lemon juice
- 2 tablespoons fresh parsley, chopped
Instructions
- Season the chicken with salt, pepper, and garlic powder.
- Melt 1 tablespoon butter in a skillet and cook the chicken until golden brown. Remove and set aside.
- In the same pan, add the remaining butter and sauté garlic and onion for 2-3 minutes.
- Add the gnocchi and chicken broth. Simmer for 4-5 minutes until the gnocchi softens.
- Pour in heavy cream, Parmesan, and Italian seasoning. Stir and simmer for 3-4 minutes.
- Return the chicken to the pan, add spinach, and squeeze in the lemon juice. Stir until combined.
- Garnish with parsley and serve warm!
Notes
- For extra flavor, add a pinch of red pepper flakes.
- Swap heavy cream with half-and-half for a lighter version.
- Use fresh gnocchi for the best texture.
