Ingredients

  • 2 large chicken breasts, cubed
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • 1 teaspoon garlic powder
  • 2 tablespoons butter
  • 4 cloves garlic, minced
  • ½ cup onion, finely chopped
  • 16 oz gnocchi
  • 1 cup chicken broth
  • 1 cup heavy cream
  • ½ cup Parmesan cheese, grated
  • 1 teaspoon Italian seasoning
  • 1 cup fresh spinach (optional)
  • 1 tablespoon lemon juice
  • 2 tablespoons fresh parsley, chopped

Instructions

  1. Season the chicken with salt, pepper, and garlic powder.
  2. Melt 1 tablespoon butter in a skillet and cook the chicken until golden brown. Remove and set aside.
  3. In the same pan, add the remaining butter and sauté garlic and onion for 2-3 minutes.
  4. Add the gnocchi and chicken broth. Simmer for 4-5 minutes until the gnocchi softens.
  5. Pour in heavy cream, Parmesan, and Italian seasoning. Stir and simmer for 3-4 minutes.
  6. Return the chicken to the pan, add spinach, and squeeze in the lemon juice. Stir until combined.
  7. Garnish with parsley and serve warm!

Notes

  • For extra flavor, add a pinch of red pepper flakes.
  • Swap heavy cream with half-and-half for a lighter version.
  • Use fresh gnocchi for the best texture.
