- 1 lb baby potatoes, halved
- 4 tbsp unsalted butter, melted
- 3 cloves garlic, minced

- ½ tsp dried rosemary
- ½ tsp salt (or to taste)
- ¼ tsp black pepper
- ¼ cup beef broth
- 1 tbsp olive oil
Instructions
- Sear the Beef (Optional): Heat olive oil in a skillet over medium-high heat. Sear the beef bites for 2-3 minutes per side until browned. Transfer to the slow cooker.
- Prepare the Garlic Butter Sauce: In a small bowl, mix melted butter, garlic, onion powder, paprika, thyme, rosemary, salt, and pepper.
- Assemble in the Slow Cooker: Place the potatoes at the bottom, add the seared beef on top, pour the garlic butter sauce over everything, and add beef broth.
- Cook: Cover and cook on low for 6-8 hours or high for 3-4 hours until the beef is tender.
- Serve: Garnish with fresh parsley and serve warm with rice, bread, or vegetables.
