Instructions
- Melt Chocolate and Butter:
- Combine chopped dark chocolate and butter in a microwave-safe bowl.
- Microwave in 30-second intervals, stirring after each, until melted. Cool slightly.
- Whisk Eggs and Sugars:
- In a large bowl, whisk eggs, caster sugar, and demerara sugar until pale and fluffy.
- Combine Wet Ingredients:
- Gradually mix the melted chocolate and butter into the egg mixture until smooth.
- Prepare Dry Ingredients:
- In a separate bowl, whisk together flour, cocoa powder, baking powder, and salt.
- Combine Wet and Dry Ingredients:
- Gently fold the dry mixture into the wet ingredients until just combined.
- Fold in chocolate chips if desired.
- Chill the Dough:
- Cover the dough and refrigerate for 30 minutes.
- Preheat Oven:
- Preheat oven to 180°C (350°F) and line a baking tray with parchment paper.
- Portion the Dough:
- Scoop tablespoons of dough onto the baking tray, spacing them 2 inches apart.
- Bake:
