Description

This fruit salad with honey yogurt dressing and crunchy pecans is a vibrant and refreshing dish that combines fresh fruits with a creamy, slightly sweet dressing. Perfect as a side, snack, or dessert!


Ingredients

  • 1 cup strawberries, washed and cut into bite-sized pieces

  • 1 cup green grapes, washed and halved

  • 1 cup red grapes, washed and halved

  • 1 cup blueberries, washed

  • 1 apple, washed, cored, peeled, and diced

  • 1 banana, peeled and sliced (add just before serving if preparing ahead)

  • ¼ cup chopped pecans (or walnuts, almonds, shredded coconut, or granola)

Honey Yogurt Dressing:

  • 1 cup plain Greek yogurt

  • 12 tablespoons honey, to taste

  • ½ teaspoon vanilla extract

  • ½ teaspoon almond extract


Instructions

  • Prepare the Fruit: Wash, peel (if needed), and chop all the fruit into bite-sized pieces. Wait to slice the banana if making ahead to avoid browning.

  • Make the Dressing: In a small bowl, mix the yogurt, honey, vanilla, and almond extracts until smooth.

  • Assemble the Salad: Add all the fruit to a large bowl. Pour the dressing over the top and gently fold to coat evenly.

  • Top and Serve: Sprinkle with chopped pecans. Serve immediately or store in the fridge for up to 2–3 days.

Notes

  • If preparing ahead, add the banana just before serving to prevent browning.
