Ingredients

  • Cinnamon cereal – 3.5 cups (Special K Zero Cinnamon recommended)
  • Peanut butter – ½ cup (natural, creamy)
  • Honey – ¼ cup (for natural sweetness and binding)
  • Vanilla yogurt – 2 cups (high-protein, such as Oikos PRO)
  • Cinnamon – ¼-½ tsp (adjust to taste)

Instructions

  • Prepare the Base: Line an 8×8-inch baking pan with parchment paper. Mix cereal, peanut butter, and honey, then press into the pan. Freeze for 20 minutes.
  • Make the Yogurt Layer: Mix vanilla yogurt with cinnamon. Pour over the frozen base and spread evenly. Cover and freeze for 60-75 minutes.
  • Cut & Serve: Let sit for 2-3 minutes before slicing into 9 bars. Enjoy as is or add toppings like fresh fruit or a drizzle of melted peanut butter.

Notes

For a nut-free version, swap peanut butter for sunflower seed butter. Store bars in the freezer for up to two weeks.
