For the Cookie Bars:

  • 1 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 1 large egg
  • 2 teaspoons vanilla extract
  • 2 ½ cups all-purpose flour
  • ½ teaspoon baking powder
  • ½ teaspoon salt

For the Frosting:

  • ½ cup unsalted butter, softened
  • 2 cups powdered sugar
  • 1 tablespoon milk
  • 1 teaspoon vanilla extract
  • Food coloring (optional)
  • Sprinkles (optional)

Instructions

  • Preheat oven to 350°F (175°C) and grease a 9×13-inch baking pan.
  • In a mixing bowl, cream together butter and sugar until light and fluffy.
  • Add egg and vanilla extract, mixing until smooth.
  • In another bowl, whisk together flour, baking powder, and salt. Gradually mix into wet ingredients.
  • Press the dough evenly into the prepared pan and bake for 15-18 minutes until lightly golden.
  • Let the bars cool completely before frosting.
  • For the frosting, beat butter, powdered sugar, milk, and vanilla until smooth. Add food coloring if desired.
  • Spread frosting over cooled bars and top with sprinkles.
  • Cut into squares and serve.

Notes

  • For extra soft bars, slightly underbake and allow them to finish setting while cooling.
  • Swap ½ teaspoon vanilla extract for almond extract for a bakery-style flavor.
  • Store in an airtight container for up to 5 days or freeze for up to 3 months.
