Ingredients

1 lb. fresh peaches, diced (peeled for best texture)

1 large roma tomato, diced

½ jalapeño, minced (seeds removed for milder salsa)

2 tablespoons fresh cilantro, chopped

Juice of 1 large lime

½ teaspoon salt (more to taste)

¼ teaspoon black pepper (more to taste)
Instructions

In a medium bowl, combine diced peaches, tomato, red onion, jalapeño, and cilantro.

Add lime juice, salt, and pepper.

Stir gently to combine.

Cover and chill for 15 minutes to let flavors meld.

For less heat, remove all seeds from jalapeño.
