Description

This French Onion Braised Beef is a slow-cooked, comforting dish with tender beef, caramelized onions, and a rich, flavorful broth.   • 3 lbs beef chuck roast (cut into large chunks)
  • 1 ½ tsp salt
  • 1 tsp black pepper
  • 2 tbsp olive oil
  • 3 large onions (thinly sliced)
  • 4 cloves garlic (minced)
  • ½ cup beef broth (or more as needed)
  • 2 tbsp Worcestershire sauce
  • 1 tsp dried thyme
  • 2 bay leaves
  • 1 cup shredded Gruyère or Swiss cheese
  • Toasted baguette slices or mashed potatoes (for serving)

Instructions

  • Sear the Beef: Season beef with salt and pepper. Heat olive oil in a Dutch oven over medium-high heat. Sear the beef until browned on all sides, then set aside.
  • Caramelize the Onions: Lower heat to medium, add onions, and cook for 20-25 minutes until deep golden brown. Stir in garlic, Worcestershire sauce, and thyme.
  • Deglaze and Braise: Pour in beef broth, scraping up browned bits. Return seared beef to the pot, add bay leaves, cover, and simmer on low for 3 hours (or bake at 325°F for 3 hours).
  • Melt the Cheese & Serve: Spoon beef and onions over toasted baguette slices or mashed potatoes. Sprinkle with cheese and broil for 2-3 minutes until bubbly.

Notes

  • For deeper flavor, add a splash of balsamic vinegar when deglazing.
  • If using a slow cooker, sear beef and caramelize onions first, then cook on LOW for 8 hours.
  • Store leftovers in an airtight container in the fridge for up to 4 days or freeze for up to 3 months.
