- 2 tbsp olive oil
- 3 large onions (thinly sliced)
- 4 cloves garlic (minced)

- 2 tbsp Worcestershire sauce
- 1 tsp dried thyme
- 2 bay leaves
- 1 cup shredded Gruyère or Swiss cheese
- Toasted baguette slices or mashed potatoes (for serving)
Instructions
- Sear the Beef: Season beef with salt and pepper. Heat olive oil in a Dutch oven over medium-high heat. Sear the beef until browned on all sides, then set aside.
- Caramelize the Onions: Lower heat to medium, add onions, and cook for 20-25 minutes until deep golden brown. Stir in garlic, Worcestershire sauce, and thyme.
- Deglaze and Braise: Pour in beef broth, scraping up browned bits. Return seared beef to the pot, add bay leaves, cover, and simmer on low for 3 hours (or bake at 325°F for 3 hours).
- Melt the Cheese & Serve: Spoon beef and onions over toasted baguette slices or mashed potatoes. Sprinkle with cheese and broil for 2-3 minutes until bubbly.
Notes
- For deeper flavor, add a splash of balsamic vinegar when deglazing.
- If using a slow cooker, sear beef and caramelize onions first, then cook on LOW for 8 hours.
