- ⅓ cup milk
- 2 tbsp olive oil
- 8 breakfast sausage links, casing removed
- 2 cups frozen tater tots, baked
- 1 (16 oz) can refried beans
- 8 (8-inch) flour tortillas
- 1 cup shredded cheddar cheese
- 1 cup shredded Monterey Jack cheese
- 2 Roma tomatoes, diced
- ¼ cup fresh cilantro, chopped
Instructions
- Bake the tater tots at 400°F (200°C) for 15-20 minutes.
- Cook the sausage in a skillet until browned, then remove.
- Scramble the eggs with milk, cooking until soft and fluffy.
- Assemble the burritos by spreading refried beans on each tortilla, then adding tater tots, eggs, sausage, cheese, tomatoes, and cilantro.
- Roll tightly, wrap in foil, and store in the freezer for up to 1 month.
- To reheat, microwave for 4-6 minutes or bake at 400°F for 30-40 minutes.
