  • 8 large eggs, beaten
  • ⅓ cup milk
  • 2 tbsp olive oil
  • 8 breakfast sausage links, casing removed
  • 2 cups frozen tater tots, baked
  • 1 (16 oz) can refried beans
  • 8 (8-inch) flour tortillas
  • 1 cup shredded cheddar cheese
  • 1 cup shredded Monterey Jack cheese
  • 2 Roma tomatoes, diced
  • ¼ cup fresh cilantro, chopped

Instructions

  • Bake the tater tots at 400°F (200°C) for 15-20 minutes.
  • Cook the sausage in a skillet until browned, then remove.
  • Scramble the eggs with milk, cooking until soft and fluffy.
  • Assemble the burritos by spreading refried beans on each tortilla, then adding tater tots, eggs, sausage, cheese, tomatoes, and cilantro.
  • Roll tightly, wrap in foil, and store in the freezer for up to 1 month.
  • To reheat, microwave for 4-6 minutes or bake at 400°F for 30-40 minutes.
