A cheesy, crispy, and hearty tater tot casserole made with seasoned ground beef, creamy mushroom sauce, veggies, and gooey melted cheddar. Perfect for family dinners or meal prep!

- 1 lb ground beef (or turkey)
- 1 small onion, diced
- 2 cloves garlic, minced
- 1 can (10.75 oz) condensed cream of mushroom soup
- ½ cup milk
- 1 cup frozen mixed vegetables (peas, carrots, corn)
- 1 tsp Worcestershire sauce
- ½ tsp salt
- ½ tsp black pepper
- 1½ cups shredded cheddar cheese
- 1 bag (32 oz) frozen tater tots
- Optional toppings: Chopped green onions, crispy turkey bacon bits, sour cream
Instructions
- Preheat oven to 375°F (190°C). Grease a 9×13-inch baking dish.
- Cook ground beef in a skillet over medium heat until browned. Drain excess grease.
- Add diced onion and garlic; sauté for 2-3 minutes.
- Stir in cream of mushroom soup, milk, Worcestershire sauce, salt, and pepper.
- Mix in frozen vegetables and let simmer for a minute.
- Transfer mixture to baking dish and sprinkle with 1 cup of cheese.
- Arrange tater tots in a single layer on top.
- Bake for 30-35 minutes until golden brown and crispy.
- Sprinkle remaining cheese and bake for another 5 minutes until melted.
- Garnish with green onions or turkey bacon bits and serve hot!

- For extra crispiness, broil the casserole for 2 minutes before serving.
