Ingredients

  • Olive Oil: 1–2 tablespoons
  • Ground Beef: 1 pound
  • Onion: 1 large, diced
  • Garlic: 4 cloves, minced
  • Diced Tomatoes: 1 can (15 ounces)
  • Tomato Sauce: 1 can (15 ounces)
  • Tomato Paste: 3 ounces (about ¼ cup)
  • Chicken Broth: 4 cups
  • Water: 1–2 cups (adjust consistency)
  • Italian Seasoning: 1 tablespoon
  • Sea Salt: 1 teaspoon (or to taste)
  • Black Pepper: To taste
  • Bowtie Pasta: 8 ounces, uncooked
  • Ricotta Cheese: ½ cup
  • Mozzarella Cheese: 2 ounces, shredded (about ½ cup)
  • Parmesan Cheese: ¼ cup, grated
  • Fresh Parsley: ¼ cup, chopped (for garnish)

Instructions

  1. Heat olive oil in a large pot over medium-high heat. Sauté ground beef, onion, and garlic until the meat is browned. Drain excess fat.
  2. Stir in diced tomatoes, tomato sauce, tomato paste, chicken broth, and water. Add Italian seasoning, salt, and pepper. Bring to a boil.
  3. Add the bowtie pasta. Reduce heat and simmer for 10–15 minutes, stirring occasionally, until pasta is al dente.
  4. In a bowl, mix ricotta cheese, mozzarella, and Parmesan.
  5. Ladle the soup into bowls, top with the cheese mixture, and garnish with fresh parsley.
