Ingredients

  • 1 cup heavy whipping cream
  • ½ cup powdered sugar (sifted)
  • ½ cup lemon curd (store-bought or homemade)
  • 1 teaspoon vanilla extract

For Garnish (Optional):

  • Lemon zest
  • Fresh mint leaves
  • Crushed cookies (shortbread or graham crackers)

Instructions

  • In a large mixing bowl, beat the heavy whipping cream until soft peaks form.
  • Gradually sift in the powdered sugar, then add vanilla extract. Continue whipping until combined.
  • Gently fold in the lemon curd using a spatula until fully incorporated and fluffy.
  • Spoon the mousse into serving glasses and chill for at least 1 hour.
  • Garnish with lemon zest, fresh mint, and crushed cookies before serving.

Notes

  • For a stronger lemon flavor, add ½ teaspoon of lemon zest to the mousse.
  • Ensure the heavy whipping cream is very cold before whipping for the best texture.
