- ½ cup powdered sugar (sifted)
- ½ cup lemon curd (store-bought or homemade)
- 1 teaspoon vanilla extract
For Garnish (Optional):
- Lemon zest
- Fresh mint leaves
- Crushed cookies (shortbread or graham crackers)
Instructions
- In a large mixing bowl, beat the heavy whipping cream until soft peaks form.
- Gradually sift in the powdered sugar, then add vanilla extract. Continue whipping until combined.
- Gently fold in the lemon curd using a spatula until fully incorporated and fluffy.
- Spoon the mousse into serving glasses and chill for at least 1 hour.
- Garnish with lemon zest, fresh mint, and crushed cookies before serving.
Notes
- For a stronger lemon flavor, add ½ teaspoon of lemon zest to the mousse.
- Ensure the heavy whipping cream is very cold before whipping for the best texture.
