A simple, hearty, and budget-friendly meal made with ground beef, rice, and a creamy cheese topping. This one-pan casserole is perfect for busy weeknights and makes excellent leftovers.


Ingredients

  • 1 lb ground beef
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1 cup uncooked rice (white or brown)
  • 2 cups beef broth
  • 1 can (10.5 oz) cream of mushroom soup
  • ½ cup sour cream
  • 1 tsp salt
  • ½ tsp black pepper
  • 1 tsp paprika
  • ½ tsp dried thyme (optional)
  • 1 cup shredded cheddar cheese

Instructions

  • Preheat oven to 350°F (175°C).
  • In a skillet, cook diced onion until soft. Add ground beef and brown. Drain excess grease.
  • Stir in garlic, salt, pepper, paprika, and thyme. Cook for 30 seconds.
  • In a bowl, mix uncooked rice, beef broth, soup, sour cream, and cooked beef mixture.
  • Pour into a greased 9×13-inch baking dish. Cover with foil.
  • Bake for 45 minutes. Remove foil, sprinkle cheese on top, and bake uncovered for another 10 minutes.
  • Let rest for 5 minutes before serving.

Notes

  • Use lean ground beef for less grease.
  • Add mushrooms, peas, or bell peppers for extra flavor.
  • Substitute cream of chicken soup if preferred.
