A simple, hearty, and budget-friendly meal made with ground beef, rice, and a creamy cheese topping. This one-pan casserole is perfect for busy weeknights and makes excellent leftovers.

- 1 lb ground beef
- 1 small onion, diced
- 2 cloves garlic, minced
- 1 cup uncooked rice (white or brown)
- 2 cups beef broth
- 1 can (10.5 oz) cream of mushroom soup
- ½ cup sour cream
- 1 tsp salt
- ½ tsp black pepper
- 1 tsp paprika
- ½ tsp dried thyme (optional)
- 1 cup shredded cheddar cheese
Instructions
- Preheat oven to 350°F (175°C).
- In a skillet, cook diced onion until soft. Add ground beef and brown. Drain excess grease.
- Stir in garlic, salt, pepper, paprika, and thyme. Cook for 30 seconds.
- In a bowl, mix uncooked rice, beef broth, soup, sour cream, and cooked beef mixture.
- Pour into a greased 9×13-inch baking dish. Cover with foil.
- Bake for 45 minutes. Remove foil, sprinkle cheese on top, and bake uncovered for another 10 minutes.
- Let rest for 5 minutes before serving.
Notes
- Use lean ground beef for less grease.
- Add mushrooms, peas, or bell peppers for extra flavor.
- Substitute cream of chicken soup if preferred.
