Description

This refreshing cucumber sandwich recipe features a creamy blend of herbed cream cheese and yogurt layered with crisp cucumber slices on whole-wheat bread. Perfect for lunch, brunch, or elegant gatherings.


Ingredients

  • 1/2 cup cream cheese, softened

  • 1/4 cup plain Greek yogurt

  • 1 tbsp chopped fresh dill

  • 1 tbsp chopped fresh chives

  • 8 slices whole-wheat sandwich bread

  • 1 large English cucumber, thinly sliced

  • Optional: 1/2 tsp lemon zest, 1 tsp lemon juice, other herbs like parsley or basil


Instructions

  • In a bowl, mix cream cheese, yogurt, dill, chives (and lemon zest/juice if using) until smooth.

  • Spread the mixture evenly on each slice of bread, all the way to the edges.

  • Layer cucumber slices over half the bread slices.

  • Top with remaining slices, cream cheese side down.

  • Slice sandwiches in halves or quarters. Serve chilled or at room temperature.

Notes

  • Pat cucumber slices dry to avoid soggy sandwiches.
