Description

A refreshing and creamy salad made with thinly sliced cucumbers, ripe avocado, and crab meat tossed in a tangy sesame-soy dressing.

Salad:

  • 2 large cucumbers, thinly sliced

  • 1 ripe avocado, diced

  • 1/2 cup imitation crab meat (or real crab, shredded)

  • 1 tbsp sesame seeds (optional, for garnish)

  • 1 tbsp chopped green onions (for garnish)

Dressing:

  • 2 tbsp rice vinegar

  • 1 tbsp soy sauce (low-sodium preferred)

  • 1 tsp sesame oil

  • 1 tsp honey or sugar (optional, for sweetness)

  • 1/2 tsp ground ginger (optional)


Instructions

  • Prepare Salad Ingredients: Slice cucumbers thinly and pat them dry. Dice the avocado and shred the crab meat. Place them in a large bowl.

  • Make Dressing: In a small bowl, whisk together rice vinegar, soy sauce, sesame oil, honey, and ginger until well combined.

  • Dress the Salad: Pour dressing over the salad ingredients and gently toss to coat.

  • Garnish & Serve: Sprinkle sesame seeds and green onions on top. Serve immediately or chill briefly for a cooler taste.

Notes

  • For a richer flavor, use real crab meat instead of imitation crab.

  • To keep avocado from browning, toss it in lime or lemon juice before adding to the salad.

  • Store leftovers in an airtight container and consume within 24 hours.
