Ingredients
– 2 medium zucchinis, grated
– 1 cup breadcrumbs (panko for extra crunch)
– ½ cup grated Parmesan cheese
– 2 large eggs
– 3 cloves garlic, minced
– 1 teaspoon garlic powder
– 1 teaspoon onion powder
– ½ teaspoon salt
– ¼ teaspoon black pepper
– 2 tablespoons fresh parsley, chopped (optional)
– Cooking oil of choice (for frying or baking)
Instructions
Follow these simple steps to make your own Crispy Zucchini Garlic Bites:
1. Preheat Oven: If baking, preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.
2. Prepare Zucchini: Grate the zucchinis using a box grater. Place the grated zucchini in a clean kitchen towel and squeeze out the excess moisture.
3. Mix Ingredients: In a large bowl, combine the grated zucchini, breadcrumbs, Parmesan cheese, eggs, minced garlic, garlic powder, onion powder, salt, black pepper, and parsley (if using). Mix until well combined.
4. Shape Bites: Using your hands, form small bites or patties from the mixture, about 1-2 tablespoons each, and place them on the prepared baking sheet.
5. Oil the Bites: If baking, lightly spray or brush the bites with cooking oil. If frying, heat oil in a skillet over medium heat.
6. Cook: For baked bites, place in the preheated oven and bake for 20-25 minutes, flipping halfway for even browning. For fried bites, cook on each side for about 3-4 minutes until golden brown and crispy.
7. Drain Excess Oil: If fried, remove bites from the pan and place them on paper towels to drain excess oil.
8. Serve: Let the bites cool slightly and serve warm with your favorite dipping sauce.
