Ingredients

1 cup shredded zucchini, drained well

1 clove garlic, grated finely

⅓ cup breadcrumbs (gluten-free or almond flour for GF)

¼ cup grated Parmigiano-Reggiano

1 large egg

2 tbsp fresh chives, chopped (or 1 tbsp dried)

1 tbsp fresh parsley, chopped (or ½ tsp dried)

1 tsp fresh basil, chopped (or ½ tsp dried)

1 tsp fresh oregano, chopped (or ½ tsp dried)

Pinch of salt and pepper

Tomato sauce (marinara) for dipping
Instructions

Preheat oven to 400°F. Grease or line a baking sheet with parchment.

Shred zucchini and squeeze out excess water using a towel.

In a bowl, mix zucchini, garlic, breadcrumbs, cheese, egg, herbs, salt, and pepper.

Scoop 1 tablespoon of the mixture and form into balls or bites.

Place on baking sheet and bake 15–18 minutes, until golden brown.

Cool slightly and serve warm with marinara for dipping.
