  • For the Squash Rings:
    • 1½ cups panko breadcrumbs (toasted)
    • 2 tablespoons olive oil
    • ½ teaspoon smoked paprika
    • ½ teaspoon cayenne pepper (optional)
    • 2 large eggs, lightly beaten
    • 1 medium delicata squash (about 2 pounds)
    • Kosher salt and black pepper, to taste
    • Fresh parsley, finely chopped (for garnish)
    • Lemon wedges, for serving
  • For the Garlic-Lemon Sauce:
    • 2 tablespoons mayonnaise (or Greek yogurt)
    • 2 tablespoons freshly squeezed lemon juice
    • 2 garlic cloves, minced into a paste
    • Salt and black pepper, to taste

Instructions

  • Preheat oven to 450°F (230°C).
  • Toast breadcrumbs with olive oil, salt, and pepper until golden (2 minutes).
  • Set up coating stations with three bowls: flour and spices, beaten eggs, and toasted breadcrumbs.
  • Slice delicata squash into ¼-inch rings, remove seeds, and season with salt and pepper.
  • Dip rings in flour mixture, then egg, then breadcrumbs.
  • Bake on a parchment-lined sheet for 18–20 minutes, flipping halfway.
  • Mix garlic-lemon sauce ingredients in a bowl until smooth.
  • Serve rings with sauce, garnished with parsley and lemon wedges.
