- ½ teaspoon cayenne pepper (optional)
- 2 large eggs, lightly beaten
- 1 medium delicata squash (about 2 pounds)
- Kosher salt and black pepper, to taste
- Fresh parsley, finely chopped (for garnish)
- Lemon wedges, for serving
- For the Garlic-Lemon Sauce:
- 2 tablespoons mayonnaise (or Greek yogurt)
- 2 tablespoons freshly squeezed lemon juice
- 2 garlic cloves, minced into a paste
- Salt and black pepper, to taste
Instructions
- Preheat oven to 450°F (230°C).
- Toast breadcrumbs with olive oil, salt, and pepper until golden (2 minutes).
- Set up coating stations with three bowls: flour and spices, beaten eggs, and toasted breadcrumbs.
- Slice delicata squash into ¼-inch rings, remove seeds, and season with salt and pepper.
- Dip rings in flour mixture, then egg, then breadcrumbs.
- Bake on a parchment-lined sheet for 18–20 minutes, flipping halfway.
- Mix garlic-lemon sauce ingredients in a bowl until smooth.
- Serve rings with sauce, garnished with parsley and lemon wedges.
