  • For the Salad:

    • 4 cups Napa cabbage, shredded
    • 1 cup shredded carrots
    • ½ cup green onions, chopped
    • ½ cup sliced almonds, toasted
    • 1 cup mandarin oranges (optional)
    • 1 cup crispy chow mein noodles
    • 2 cups cooked chicken, shredded or diced
  • For the Dressing:

    • ¼ cup soy sauce (low sodium)
    • 2 tbsp honey (or maple syrup)
    • 2 tbsp rice vinegar
    • 1 tbsp sesame oil
    • 1 tsp minced garlic
    • 1 tsp grated ginger
    • ½ tsp red pepper flakes (optional)
    • 1 tbsp toasted sesame seeds

Instructions

  • Make the Dressing: In a small bowl, whisk together soy sauce, honey, rice vinegar, sesame oil, garlic, ginger, and red pepper flakes. Set aside.
  • Toast the Almonds: Heat a dry pan over medium heat. Toast sliced almonds for 2-3 minutes until golden brown. Set aside.
  • Prepare the Chicken: Shred or dice cooked chicken. If using fresh chicken, cook and season as desired before shredding.
  • Assemble the Salad: In a large bowl, mix cabbage, carrots, green onions, and chicken. Toss to combine.
  • Add the Dressing: Pour the dressing over the salad and toss until evenly coated.
  • Add Crunchy Toppings: Just before serving, sprinkle with toasted almonds and crispy chow mein noodles.
  • Garnish & Serve: Top with sesame seeds and serve immediately!
