- 4 cups Napa cabbage, shredded

- ½ cup sliced almonds, toasted
- 1 cup mandarin oranges (optional)
- 1 cup crispy chow mein noodles
- 2 cups cooked chicken, shredded or diced

- ¼ cup soy sauce (low sodium)
- 2 tbsp honey (or maple syrup)
- 2 tbsp rice vinegar
- 1 tbsp sesame oil
- 1 tsp minced garlic
- 1 tsp grated ginger
- ½ tsp red pepper flakes (optional)
- 1 tbsp toasted sesame seeds
Instructions
- Make the Dressing: In a small bowl, whisk together soy sauce, honey, rice vinegar, sesame oil, garlic, ginger, and red pepper flakes. Set aside.
- Toast the Almonds: Heat a dry pan over medium heat. Toast sliced almonds for 2-3 minutes until golden brown. Set aside.
- Prepare the Chicken: Shred or dice cooked chicken. If using fresh chicken, cook and season as desired before shredding.
- Assemble the Salad: In a large bowl, mix cabbage, carrots, green onions, and chicken. Toss to combine.
- Add the Dressing: Pour the dressing over the salad and toss until evenly coated.
- Add Crunchy Toppings: Just before serving, sprinkle with toasted almonds and crispy chow mein noodles.
- Garnish & Serve: Top with sesame seeds and serve immediately!
