- 1 lb Brussels sprouts, trimmed and halved
- 1/2 cup blue cheese (crumbled)
- 1/4 cup chopped pecans or walnuts (optional)
- 6–8 strips turkey bacon, cooked and chopped
- 1–2 tablespoons olive oil
- Salt and pepper to taste
- 1/2 teaspoon garlic powder (optional)
- Honey for drizzling
Instructions
- Preheat the oven to 400°F (200°C) and line a baking sheet with parchment paper.
- Toss Brussels sprouts with olive oil, salt, pepper, and garlic powder. Place cut-side down on the baking sheet.
- Roast for 20–25 minutes, flipping halfway, until crispy and golden brown.
- While sprouts roast, cook turkey bacon in a skillet until crispy. Cut into bite-sized pieces.
- Remove sprouts from the oven, top each with turkey bacon, blue cheese, and pecans.
- Return to the oven for 5–7 minutes to melt the cheese.
- Drizzle with honey before serving.
Notes
- Swap blue cheese with feta or mozzarella if preferred.
- Add red pepper flakes for a spicy kick.
- To make it vegetarian, skip the turkey bacon and add roasted chickpeas or extra nuts for texture.
