  • 1 lb Brussels sprouts, trimmed and halved
  • 1/2 cup blue cheese (crumbled)
  • 1/4 cup chopped pecans or walnuts (optional)
  • 68 strips turkey bacon, cooked and chopped
  • 12 tablespoons olive oil
  • Salt and pepper to taste
  • 1/2 teaspoon garlic powder (optional)
  • Honey for drizzling

Instructions

  • Preheat the oven to 400°F (200°C) and line a baking sheet with parchment paper.
  • Toss Brussels sprouts with olive oil, salt, pepper, and garlic powder. Place cut-side down on the baking sheet.
  • Roast for 20–25 minutes, flipping halfway, until crispy and golden brown.
  • While sprouts roast, cook turkey bacon in a skillet until crispy. Cut into bite-sized pieces.
  • Remove sprouts from the oven, top each with turkey bacon, blue cheese, and pecans.
  • Return to the oven for 5–7 minutes to melt the cheese.
  • Drizzle with honey before serving.

Notes

  • Swap blue cheese with feta or mozzarella if preferred.
  • Add red pepper flakes for a spicy kick.
