- 2 medium zucchini, thinly sliced
- 2 large eggs
- 1 cup panko breadcrumbs
- ½ cup grated Parmesan cheese
- 1 teaspoon garlic powder
- 1 teaspoon Italian seasoning
- ½ teaspoon salt
- ½ teaspoon black pepper
- Cooking spray
Instructions
- Preheat oven to 425°F (220°C) and line a baking sheet with parchment paper.
- Slice zucchini into ¼-inch thick rounds.
- In a bowl, whisk eggs. In another bowl, mix breadcrumbs, Parmesan, garlic powder, Italian seasoning, salt, and pepper.
- Dip each zucchini slice in the egg, then coat in the breadcrumb mixture.
- Place on the baking sheet, spray lightly with cooking spray, and bake for 20-25 minutes, flipping halfway.
- Serve immediately with your favorite dip!
