Description

These crispy baked zucchini chips are a healthier alternative to regular chips! Coated in seasoned panko and Parmesan, they are oven-baked to golden perfection. Enjoy them as a snack, appetizer, or side dish with your favorite dip.

  • 2 medium zucchini, thinly sliced
  • 2 large eggs
  • 1 cup panko breadcrumbs
  • ½ cup grated Parmesan cheese
  • 1 teaspoon garlic powder
  • 1 teaspoon Italian seasoning
  • ½ teaspoon salt
  • ½ teaspoon black pepper
  • Cooking spray

Instructions

  • Preheat oven to 425°F (220°C) and line a baking sheet with parchment paper.
  • Slice zucchini into ¼-inch thick rounds.
  • In a bowl, whisk eggs. In another bowl, mix breadcrumbs, Parmesan, garlic powder, Italian seasoning, salt, and pepper.
  • Dip each zucchini slice in the egg, then coat in the breadcrumb mixture.
  • Place on the baking sheet, spray lightly with cooking spray, and bake for 20-25 minutes, flipping halfway.
  • Serve immediately with your favorite dip!
