- 1 lb kielbasa (sliced)
- 1 small onion (diced)
- 1 cup carrots (sliced)
- 3 cloves garlic (minced)
- 2 tbsp butter
- 4 cups chicken broth
- 1 ½ cups milk (or heavy cream)
- 1 cup shredded cheddar cheese
- ½ tsp salt
- ¼ tsp black pepper
- ½ tsp smoked paprika
- Chopped parsley for garnish
Instructions
- Brown kielbasa in a large pot, then remove and set aside.
- Sauté onions, carrots, and garlic in butter until softened.
- Add potatoes, broth, salt, pepper, and smoked paprika. Simmer until potatoes are tender.
- Stir in milk and shredded cheese until melted and creamy.
- Return kielbasa to the pot and heat through for 5 minutes.
- Serve hot, garnished with fresh parsley.
Notes
- For extra thickness, mash some potatoes before serving.

- For a lighter version, use turkey kielbasa and low-fat milk.
