Ingredients

  • 4 cups potatoes (peeled & diced)
  • 1 lb kielbasa (sliced)
  • 1 small onion (diced)
  • 1 cup carrots (sliced)
  • 3 cloves garlic (minced)
  • 2 tbsp butter
  • 4 cups chicken broth
  • 1 ½ cups milk (or heavy cream)
  • 1 cup shredded cheddar cheese
  • ½ tsp salt
  • ¼ tsp black pepper
  • ½ tsp smoked paprika
  • Chopped parsley for garnish

Instructions

  • Brown kielbasa in a large pot, then remove and set aside.
  • Sauté onions, carrots, and garlic in butter until softened.
  • Add potatoes, broth, salt, pepper, and smoked paprika. Simmer until potatoes are tender.
  • Stir in milk and shredded cheese until melted and creamy.
  • Return kielbasa to the pot and heat through for 5 minutes.
  • Serve hot, garnished with fresh parsley.

Notes

  • For extra thickness, mash some potatoes before serving.

  • For a lighter version, use turkey kielbasa and low-fat milk.
