For the Mousse:
- 1 cup creamy natural peanut butter
- 1 cup chilled coconut cream
- ¼ cup maple syrup
- 1 teaspoon vanilla extract
- ¼ teaspoon sea salt
For the Chocolate Ganache:
- ½ cup dark chocolate chips
- ¼ cup coconut milk
Optional Toppings:
- Chopped peanuts
- Shaved dark chocolate
- Sea salt flakes
Instructions
- Prepare the Coconut Cream: Chill a can of full-fat coconut milk overnight. Scoop out the solid coconut cream into a bowl.
- Whip the Coconut Cream: Use a hand mixer to beat the coconut cream until fluffy.
- Make the Peanut Butter Mixture: Combine peanut butter, maple syrup, vanilla extract, and sea salt in a bowl. Mix until smooth.
- Fold in the Coconut Cream: Gently fold the whipped coconut cream into the peanut butter mixture until fully combined.
- Assemble the Mousse Cups: Spoon the mixture into serving cups or ramekins. Refrigerate for at least 30 minutes.
- Make the Chocolate Ganache: Heat coconut milk and pour it over chocolate chips. Stir until smooth and glossy.
- Add the Ganache: Spoon the ganache over the chilled mousse. Refrigerate for another 15 minutes.
- Garnish & Serve: Sprinkle with chopped peanuts, chocolate shavings, or sea salt flakes before serving.
