For the Mousse:

  • 1 cup creamy natural peanut butter
  • 1 cup chilled coconut cream
  • ¼ cup maple syrup
  • 1 teaspoon vanilla extract
  • ¼ teaspoon sea salt

For the Chocolate Ganache:

  • ½ cup dark chocolate chips
  • ¼ cup coconut milk

Optional Toppings:

  • Chopped peanuts
  • Shaved dark chocolate
  • Sea salt flakes

Instructions

  • Prepare the Coconut Cream: Chill a can of full-fat coconut milk overnight. Scoop out the solid coconut cream into a bowl.
  • Whip the Coconut Cream: Use a hand mixer to beat the coconut cream until fluffy.
  • Make the Peanut Butter Mixture: Combine peanut butter, maple syrup, vanilla extract, and sea salt in a bowl. Mix until smooth.
  • Fold in the Coconut Cream: Gently fold the whipped coconut cream into the peanut butter mixture until fully combined.
  • Assemble the Mousse Cups: Spoon the mixture into serving cups or ramekins. Refrigerate for at least 30 minutes.
  • Make the Chocolate Ganache: Heat coconut milk and pour it over chocolate chips. Stir until smooth and glossy.
  • Add the Ganache: Spoon the ganache over the chilled mousse. Refrigerate for another 15 minutes.
  • Garnish & Serve: Sprinkle with chopped peanuts, chocolate shavings, or sea salt flakes before serving.
