  • 2 garlic cloves, minced
  • 3 carrots, peeled and diced
  • 2 celery stalks, diced
  • 3 cups leftover turkey, shredded
  • ¼ cup all-purpose flour
  • 4 cups chicken or turkey broth
  • 2 cups milk or half-and-half
  • ½ cup heavy cream (optional)
  • 1 tsp dried thyme
  • ½ tsp dried rosemary
  • Salt and pepper, to taste
  • 1 cup frozen peas or corn (optional)

Instructions

  • Heat olive oil in a large pot over medium heat. Sauté onions, garlic, carrots, and celery for 5 minutes until softened.
  • Sprinkle flour over the vegetables and stir well. Cook for 1 minute to remove the raw flour taste.
  • Slowly pour in the broth and milk, stirring constantly to prevent lumps. Bring to a gentle simmer.
  • Stir in thyme, rosemary, salt, and pepper. Add shredded turkey and peas or corn (if using).
  • Simmer for 20 minutes, allowing the flavors to meld together.
  • For extra creaminess, stir in heavy cream just before serving.
  • Serve hot with crusty bread or biscuits and enjoy!
