  • 1 lb ground chicken
  • 1 tbsp butter or olive oil
  • 3 cloves garlic, minced
  • 1 small onion, diced
  • 1 cup carrots, sliced
  • 1 tsp Italian seasoning
  • ½ tsp red pepper flakes (optional)
  • 4 cups chicken broth
  • 1½ cups heavy cream
  • ½ cup grated Parmesan cheese
  • 2 cups fresh spinach (or kale)
  • Salt & black pepper to taste

Instructions

  • Heat butter or olive oil in a pot over medium heat. Add ground chicken and cook until browned.
  • Stir in onion, garlic, carrots, Italian seasoning, and red pepper flakes. Cook for 3-4 minutes.
  • Pour in chicken broth and bring to a boil. Simmer for 10-15 minutes until veggies soften.
  • Reduce heat and stir in heavy cream, Parmesan cheese, and spinach. Simmer for 5 more minutes.
  • Adjust seasoning, serve hot, and enjoy with crusty bread or salad.

Notes

  • For a thicker soup, mix 1 tbsp cornstarch with 2 tbsp water and stir it in before adding the cream.
  • Substitute coconut milk for a dairy-free version.
