- 1 lb lump crab meat (fresh or canned)
- 2 tbsp unsalted butter
- ½ cup onion (finely chopped)
- ½ cup celery (finely chopped)
- 3 cloves garlic (minced)
- 2 tbsp tomato paste
- 1 tsp Old Bay seasoning
- ½ tsp salt
- ¼ tsp black pepper
- ½ tsp cayenne pepper (optional)
- 2 tbsp all-purpose flour
- 2 cups seafood or chicken broth
- 1 ½ cups heavy cream
- 1 tbsp Worcestershire sauce
- 1 tbsp lemon juice
- 1 tsp fresh thyme (or ½ tsp dried)
Instructions
- Melt butter in a pot over medium heat and sauté onions, celery, and garlic for 3-4 minutes.
- Stir in tomato paste, Old Bay seasoning, salt, black pepper, and cayenne pepper. Cook for 1-2 minutes.
- Sprinkle in flour and stir for 1 minute to form a roux.
- Gradually add broth while stirring. Simmer for 10 minutes.
- Reduce heat and add heavy cream, Worcestershire sauce, lemon juice, and thyme. Let simmer for 5 minutes.
- Gently fold in the lump crab meat and cook for 2-3 more minutes.
- Taste and adjust seasoning. Serve hot with crusty bread.

- For an ultra-smooth bisque, blend the soup before adding the crab.
