  • 1 lb lump crab meat (fresh or canned)
  • 2 tbsp unsalted butter
  • ½ cup onion (finely chopped)
  • ½ cup celery (finely chopped)
  • 3 cloves garlic (minced)
  • 2 tbsp tomato paste
  • 1 tsp Old Bay seasoning
  • ½ tsp salt
  • ¼ tsp black pepper
  • ½ tsp cayenne pepper (optional)
  • 2 tbsp all-purpose flour
  • 2 cups seafood or chicken broth
  • 1 ½ cups heavy cream
  • 1 tbsp Worcestershire sauce
  • 1 tbsp lemon juice
  • 1 tsp fresh thyme (or ½ tsp dried)

Instructions

  • Melt butter in a pot over medium heat and sauté onions, celery, and garlic for 3-4 minutes.
  • Stir in tomato paste, Old Bay seasoning, salt, black pepper, and cayenne pepper. Cook for 1-2 minutes.
  • Sprinkle in flour and stir for 1 minute to form a roux.
  • Gradually add broth while stirring. Simmer for 10 minutes.
  • Reduce heat and add heavy cream, Worcestershire sauce, lemon juice, and thyme. Let simmer for 5 minutes.
  • Gently fold in the lump crab meat and cook for 2-3 more minutes.
  • Taste and adjust seasoning. Serve hot with crusty bread.

Notes

  • For an ultra-smooth bisque, blend the soup before adding the crab.
  • Adjust seasoning to taste—add more Old Bay or cayenne for extra spice.
