  • 1 small onion, diced
  • 3 cloves garlic, minced
  • 1 cup carrots, sliced
  • 3 cups potatoes, peeled & diced
  • 2 cups cooked, shredded chicken
  • 4 cups chicken broth
  • ½ tsp salt
  • ¼ tsp black pepper
  • ½ tsp smoked paprika
  • 1 cup heavy cream (or milk for a lighter version)
  • ½ cup shredded cheddar cheese (optional)

Optional Garnishes: Chopped parsley, crumbled turkey bacon, extra shredded cheese


Instructions

  • In a large pot, melt butter over medium heat. Sauté onions, garlic, and carrots for 5 minutes.
  • Add potatoes, chicken broth, salt, pepper, and smoked paprika. Simmer for 15-20 minutes until potatoes are tender.
  • Mash some potatoes for a thicker consistency.
  • Stir in shredded chicken and heavy cream. Let it heat through for 5 minutes.
  • (Optional) Add shredded cheese and stir until melted.
  • Serve warm with your favorite garnishes.

  • Use rotisserie chicken for convenience.
  • For a dairy-free version, substitute coconut milk for heavy cream.
