Description
A cozy, creamy chicken corn pasta tossed with crispy beef or turkey bacon, sweet corn, and a rich Parmesan sauce. Ready in under 1 hour and made in one skillet!
Ingredients

12 oz pasta (penne, bowtie, or fettuccine)

1 lb chicken breasts or thighs, cubed

1 ½ cups corn (fresh, frozen, or canned)

4 slices turkey or beef bacon, cooked and chopped

3 garlic cloves, minced

¾ cup heavy cream
-
½ cup chicken broth
-
¾ cup Parmesan cheese, grated

2 tbsp olive oil or butter

Salt, pepper, smoked paprika, red pepper flakes (optional)

Fresh parsley or green onions for garnish

Instructions

Cook pasta in salted boiling water until al dente. Reserve ½ cup pasta water, then drain.

In a skillet, cook bacon until crispy. Remove, chop, and set aside.

In the same skillet, sear chicken with salt, pepper, and paprika until cooked through. Set aside.

Sauté garlic and corn briefly in the skillet.

Pour in chicken broth and cream. Simmer, then stir in Parmesan.

Return pasta, chicken, and bacon to skillet. Toss to coat in sauce.

Garnish with fresh herbs and serve hot.
