Ingredients

  • 1 tablespoon olive oil

  • 1 lb boneless skinless chicken breasts, cubed

  • 1 teaspoon salt

  • ½ teaspoon black pepper

  • 1 tablespoon Italian seasoning

  • 1 teaspoon garlic powder

  • 1 small onion, chopped

  • 1 tablespoon minced garlic

  • 1 cup orzo pasta

  • 3 cups chicken broth

  • 1 cup milk (or non-dairy milk)

  • 3 cups fresh spinach, chopped

  • ¼ cup Parmesan cheese

  • Juice of ½ lemon


Instructions

  • Heat olive oil in a large pot over medium heat.

  • Add chicken, season with salt, pepper, Italian seasoning, and garlic powder. Cook 4–5 minutes until browned.

  • Stir in onion and garlic; sauté 2 minutes.

  • Add orzo, broth, and milk. Bring to a boil, then reduce heat and cover. Simmer 10–12 minutes, stirring occasionally.

  • Stir in spinach, Parmesan, and lemon juice. Let sit 3–5 minutes to thicken. Serve warm.
