Description

This Creamy Chicken and Orzo Skillet is a rich, comforting, one-pan meal loaded with tender chicken, creamy orzo, and vibrant veggies simmered in a garlicky, herby broth. It’s perfect for a quick weeknight dinner or a cozy family meal.


Ingredients

  • 1 lb chicken breasts or thighs, cut into bite-sized pieces

  • 1 1/2 cups orzo pasta (uncooked)

  • 3 cloves garlic, minced

  • 1 small onion, diced

  • 1 cup carrots, diced

  • 1 cup spinach or kale (optional)

  • 4 cups chicken broth (low-sodium preferred)

  • 1/2 cup heavy cream or coconut milk

  • 2 tbsp olive oil or butter

  • 1 tsp dried Italian seasoning

  • Salt & pepper to taste

  • Juice of 1/2 lemon (optional)

  • Chopped fresh parsley or basil (for garnish, optional)

  • 1/2 cup grated Parmesan cheese (optional)


Instructions

  • Cook the Chicken: Heat olive oil or butter in a large skillet over medium heat. Add chicken, season with salt, pepper, and Italian seasoning. Cook for 6-8 minutes until cooked through. Remove chicken and set aside.

  • Cook the Veggies & Orzo: In the same skillet, add more oil if needed. Add onion, carrots, and garlic. Cook for 3-4 minutes until softened. Stir in orzo and cook for 1-2 minutes, toasting slightly.

  • Add Liquid & Chicken: Pour in chicken broth and bring to a simmer. Reduce heat to medium-low and cook for 10-12 minutes, stirring occasionally until orzo is tender. Add chicken, spinach or kale, heavy cream, and Parmesan cheese. Cook for another 3-4 minutes until creamy.

  • Finish & Serve: Stir in lemon juice if desired. Taste and adjust seasonings. Serve hot, garnished with parsley or basil.

Notes

  • For dairy-free, use coconut milk and skip Parmesan cheese.

  • For gluten-free, replace orzo with gluten-free pasta or rice.

  • Store leftovers in the fridge for up to 3 days.
