Ingredients
-
1 lb chicken breasts or thighs, cut into bite-sized pieces
-
1 1/2 cups orzo pasta (uncooked)
-
3 cloves garlic, minced
-
1 small onion, diced
-
1 cup carrots, diced
-
1 cup spinach or kale (optional)
-
4 cups chicken broth (low-sodium preferred)
-
1/2 cup heavy cream or coconut milk
-
2 tbsp olive oil or butter
-
1 tsp dried Italian seasoning
-
Salt & pepper to taste
-
Juice of 1/2 lemon (optional)
-
Chopped fresh parsley or basil (for garnish, optional)
-
1/2 cup grated Parmesan cheese (optional)
Instructions
-
Cook the Chicken: Heat olive oil or butter in a large skillet over medium heat. Add chicken, season with salt, pepper, and Italian seasoning. Cook for 6-8 minutes until cooked through. Remove chicken and set aside.
-
Cook the Veggies & Orzo: In the same skillet, add more oil if needed. Add onion, carrots, and garlic. Cook for 3-4 minutes until softened. Stir in orzo and cook for 1-2 minutes, toasting slightly.
-
Add Liquid & Chicken: Pour in chicken broth and bring to a simmer. Reduce heat to medium-low and cook for 10-12 minutes, stirring occasionally until orzo is tender. Add chicken, spinach or kale, heavy cream, and Parmesan cheese. Cook for another 3-4 minutes until creamy.
-
Finish & Serve: Stir in lemon juice if desired. Taste and adjust seasonings. Serve hot, garnished with parsley or basil.
