    • 1 medium cauliflower, chopped into florets
    • 3 cloves garlic, minced
    • 2 tbsp olive oil or butter (for roasting)
    • Salt & pepper to taste
    • 1/2 cup heavy cream or coconut milk (for creaminess)
    • 1 1/2 cups shredded Gruyere, Parmesan, or white cheddar cheese (divided)
    • 1/4 tsp nutmeg (optional)
  • For the Toasts:

    • 4 thick slices of sourdough or rustic bread, toasted
  • For Garnish:

    • Chopped chives or parsley

Instructions

  • Roast the Cauliflower:

    • Preheat oven to 425°F (220°C).
    • Spread cauliflower florets on a baking sheet, drizzle with olive oil or melted butter, and season with salt and pepper.
    • Roast for 25-30 minutes, stirring halfway through until golden and tender.
  • Make the Cauliflower Mixture:

    • Transfer roasted cauliflower to a food processor.
    • Add garlic, heavy cream or coconut milk, 1 cup of shredded cheese, and nutmeg if using.
    • Pulse until creamy but slightly chunky. Taste and adjust seasoning if needed.
  • Prepare the Toasts:

    • Toast the bread slices until golden and crisp.
  • Assemble & Bake:

    • Spread the cauliflower mixture over each toast.
    • Sprinkle the remaining cheese on top.
    • Broil for 3-5 minutes, or until the cheese is melted and bubbly.
  • Garnish & Serve:

    • Sprinkle with chopped chives or parsley.
    • Serve hot and enjoy!

  • For a dairy-free version, use coconut milk and dairy-free cheese.
