Ingredients

  • 2 tbsp butter
  • 1 small white onion, chopped
  • 4 cloves garlic, minced
  • 2 tbsp Cajun seasoning, divided
  • 1 lb chicken breasts or tenders
  • 1 tbsp neutral oil
  • 1 can (14.5 oz) diced tomatoes, undrained
  • 5 cups chicken broth
  • 1 cup heavy cream (room temperature)
  • 1 cup ditalini or small pasta (dry)
  • 1 cup freshly grated Parmesan cheese
  • Green onions (for garnish)

Instructions

  • Melt butter in a large pot and sauté onion and garlic for 5 minutes. Stir in 1 tbsp Cajun seasoning.
  • Add chicken broth, diced tomatoes, and heavy cream. Bring to a boil, then simmer.
  • Add pasta and cook for 10 minutes, stirring occasionally.
  • Season chicken with remaining Cajun seasoning. Cook in a skillet with oil for 3-5 minutes per side, then chop.
  • Stir Parmesan cheese into the soup. Add chicken and let simmer for 2-3 minutes.
  • Serve hot, garnished with green onions.

Notes

  • For extra spice, add red pepper flakes or hot sauce.
  • Swap heavy cream for half-and-half for a lighter version.
  • Cook pasta separately if planning to store leftovers.
