- 2 tbsp butter
- 1 small white onion, chopped
- 4 cloves garlic, minced
- 2 tbsp Cajun seasoning, divided
- 1 lb chicken breasts or tenders
- 1 tbsp neutral oil
- 1 can (14.5 oz) diced tomatoes, undrained
- 5 cups chicken broth
- 1 cup heavy cream (room temperature)
- 1 cup ditalini or small pasta (dry)
- 1 cup freshly grated Parmesan cheese
- Green onions (for garnish)
Instructions
- Melt butter in a large pot and sauté onion and garlic for 5 minutes. Stir in 1 tbsp Cajun seasoning.
- Add chicken broth, diced tomatoes, and heavy cream. Bring to a boil, then simmer.
- Add pasta and cook for 10 minutes, stirring occasionally.
- Season chicken with remaining Cajun seasoning. Cook in a skillet with oil for 3-5 minutes per side, then chop.
- Stir Parmesan cheese into the soup. Add chicken and let simmer for 2-3 minutes.
- Serve hot, garnished with green onions.
Notes
- For extra spice, add red pepper flakes or hot sauce.
- Swap heavy cream for half-and-half for a lighter version.
- Cook pasta separately if planning to store leftovers.
