- 3 cups chicken or beef broth
- 2 cups milk (whole or half-and-half)
- 2 cups shredded cheddar cheese
- ¼ cup sour cream
Instructions
- Brown the beef: In a large pot, cook ground beef over medium heat until browned. Drain excess grease and set aside.
- Sauté the veggies: Melt butter in the same pot, then add onions, carrots, and garlic. Cook for 3-5 minutes until softened.
- Cook the potatoes: Add diced potatoes, broth, salt, and pepper. Bring to a boil, then simmer for 15 minutes until potatoes are tender.
