  • 2 tbsp butter
  • ½ cup onion, diced
  • ½ cup carrots, shredded
  • 3 cups potatoes, peeled & diced
  • 2 cloves garlic, minced
  • 1 tsp salt
  • ½ tsp black pepper
  • 3 cups chicken or beef broth
  • 2 cups milk (whole or half-and-half)
  • 2 cups shredded cheddar cheese
  • ¼ cup sour cream

Instructions

  • Brown the beef: In a large pot, cook ground beef over medium heat until browned. Drain excess grease and set aside.
  • Sauté the veggies: Melt butter in the same pot, then add onions, carrots, and garlic. Cook for 3-5 minutes until softened.
  • Cook the potatoes: Add diced potatoes, broth, salt, and pepper. Bring to a boil, then simmer for 15 minutes until potatoes are tender.
  • Make it creamy: Stir in milk and shredded cheddar cheese, allowing it to melt smoothly into the broth.
