Creamy Bacon Salad with Cucumber and Tomato

Description

A refreshing and creamy summer salad made with crispy bacon, juicy cherry tomatoes, crunchy cucumbers, and ranch dressing. The perfect easy side dish for BBQs, potlucks, or weeknight dinners.


Ingredients

  • 5 slices thick-cut bacon, cooked and diced

  • 12 teaspoons bacon drippings (optional, for extra flavor)

  • 1 cup Ranch dressing (low fat is fine)

  • 1 pint cherry tomatoes, sliced in half

  • 2 large English cucumbers, diced

  • Salt and pepper, to taste


Instructions

  • Cook bacon until crispy. Let cool and chop.

  • Reserve 1–2 teaspoons of bacon drippings (optional).

  • Slice cherry tomatoes in half and dice cucumbers. Place in a large bowl.

  • In a separate bowl, mix ranch, bacon, and drippings.

  • Pour dressing over vegetables and toss gently.

  • Season with salt and pepper.

  • Chill at least 1 hour before serving.

Notes

  • Use turkey bacon or beef bacon for a halal version.

  • For less watery salad, salt and drain cucumbers before mixing.

  • Salad keeps well in the fridge for up to 3 days.
