Ingredients

  • 8 cups greens (spinach, arugula, or spring mix)

  • 1 avocado, sliced or diced

  • 1 shallot, minced

  • 4 oz sliced almonds, toasted

  • Juice of ½ lemon or orange

  • Extra virgin olive oil (lemon or fruity)

  • Kosher salt and black pepper, to taste


Instructions

  • Pan-sear shrimp or use leftovers.

  • Wash and dry greens.

  • Toast sliced almonds until golden.

  • Assemble salad: mix greens, shrimp, avocado, shallots, and almonds.

  • Drizzle with olive oil and citrus juice.

  • Season with salt and pepper. Serve immediately.
