Description

For the Cookies:

  • 1 cup (2 sticks) unsalted butter, softened
  • 1 cup granulated sugar
  • 1 large egg
  • 1 tsp vanilla extract
  • 3 cups all-purpose flour
  • 1/2 tsp baking powder
  • 1/4 tsp salt

For the Filling:

  • 2 tbsp unsalted butter, melted
  • 1/2 cup brown sugar
  • 1 tbsp ground cinnamon

For the Glaze:

  • 1 cup powdered sugar
  • 2 tbsp milk or heavy cream
  • 1/2 tsp vanilla extract

Instructions

  • In a large bowl, cream together butter and sugar until light and fluffy.
  • Add egg and vanilla extract; mix until combined.
  • In another bowl, whisk flour, baking powder, and salt.
  • Gradually add dry ingredients to the butter mixture, mixing until just combined.
  • Divide the dough in half, wrap each portion in plastic wrap, and chill for 30 minutes.
  • Roll each dough portion into a rectangle (about 1/4 inch thick).
  • Brush with melted butter and sprinkle with a cinnamon-sugar mixture.
  • Roll up the dough tightly from the long edge and chill for 15 minutes.
  • Preheat oven to 350°F (175°C) and line baking sheets with parchment paper.
  • Slice dough into 1/4 inch thick cookies and place them on the baking sheet.
  • Bake for 10-12 minutes or until the edges are lightly golden.
  • Let cookies cool, then drizzle with glaze.

Notes

  • Store cookies in an airtight container at room temperature for up to 3 days.
  • Freeze dough logs for up to 3 months. Thaw slightly before slicing and baking.
