For the Cookies:
- 1 cup (2 sticks) unsalted butter, softened
- 1 cup granulated sugar
- 1 large egg
- 1 tsp vanilla extract
- 3 cups all-purpose flour
- 1/2 tsp baking powder
- 1/4 tsp salt
For the Filling:
- 2 tbsp unsalted butter, melted
- 1/2 cup brown sugar
- 1 tbsp ground cinnamon
For the Glaze:
- 1 cup powdered sugar
- 2 tbsp milk or heavy cream
- 1/2 tsp vanilla extract
Instructions
- In a large bowl, cream together butter and sugar until light and fluffy.
- Add egg and vanilla extract; mix until combined.
- In another bowl, whisk flour, baking powder, and salt.
- Gradually add dry ingredients to the butter mixture, mixing until just combined.
- Divide the dough in half, wrap each portion in plastic wrap, and chill for 30 minutes.
- Roll each dough portion into a rectangle (about 1/4 inch thick).
- Brush with melted butter and sprinkle with a cinnamon-sugar mixture.
- Roll up the dough tightly from the long edge and chill for 15 minutes.
- Preheat oven to 350°F (175°C) and line baking sheets with parchment paper.
- Slice dough into 1/4 inch thick cookies and place them on the baking sheet.
- Bake for 10-12 minutes or until the edges are lightly golden.
- Let cookies cool, then drizzle with glaze.
Notes
- Store cookies in an airtight container at room temperature for up to 3 days.
- Freeze dough logs for up to 3 months. Thaw slightly before slicing and baking.
