For the Cheesecake Base:
- 1¾ cups ground graham crackers
- 6 tbsp unsalted butter, melted
- 16 oz cream cheese, softened
- ¾ cup granulated sugar
- 2 large eggs
- 1 large egg yolk
- 2 tsp vanilla extract
- ½ tsp fine sea salt
For the Topping:
- 18 fresh strawberries, rinsed and dried
- 8 oz 56% dark chocolate, melted
Instructions
- Preheat oven to 325°F (163°C).
- Prepare the crust by mixing graham cracker crumbs with melted butter. Press into mini cheesecake molds.
- Make the filling by beating softened cream cheese until smooth. Add sugar, eggs, yolk, vanilla, and salt. Mix until combined.
- Fill the molds evenly with the cheesecake mixture. Smooth the tops.
- Bake for 20-25 minutes. The centers should be slightly jiggly. Cool at room temperature, then refrigerate for at least 1 hour.
- Melt the chocolate using a double boiler or microwave. Dip strawberries into the melted chocolate and place on parchment paper.
- Assemble the cheesecakes by spooning melted chocolate on top and placing a chocolate-dipped strawberry in the center.
- Serve immediately or refrigerate until ready to enjoy!
