- 1 ½ lbs boneless, skinless chicken thighs or breasts
- 3 tbsp olive oil (divided)
- 1 tsp ground cumin
- ½ tsp smoked paprika
- ½ tsp chili powder
- ½ tsp cayenne pepper (adjust for spice)
- 1 ½ tbsp fresh lime juice
- 1 tsp garlic powder
- 1 tsp onion powder
- 1 tsp salt
- ½ tsp black pepper
- 8 small corn tortillas
- 1 small onion, chopped
- ¼ cup fresh cilantro, chopped
- 2 limes, cut into wedges
- ½ cup sour cream (or plain yogurt)
Instructions
- In a bowl, mix 2 tbsp olive oil, lime juice, cumin, paprika, chili powder, cayenne, garlic powder, onion powder, salt, and pepper. Add chicken and marinate for at least 1 hour.
- Heat a skillet over medium-high heat, add 1 tbsp olive oil, and cook chicken for 6-8 minutes per side until fully cooked (165°F internal temp).
- Let the chicken rest for 5 minutes, then dice into bite-sized pieces.
- Warm tortillas in a dry skillet for 30 seconds per side.
- Assemble tacos: Fill tortillas with chicken, onion, cilantro, a squeeze of lime, and sour cream. Serve immediately.
