  • 1 ½ lbs boneless, skinless chicken thighs or breasts
  • 3 tbsp olive oil (divided)
  • 1 tsp ground cumin
  • ½ tsp smoked paprika
  • ½ tsp chili powder
  • ½ tsp cayenne pepper (adjust for spice)
  • 1 ½ tbsp fresh lime juice
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 tsp salt
  • ½ tsp black pepper
  • 8 small corn tortillas
  • 1 small onion, chopped
  • ¼ cup fresh cilantro, chopped
  • 2 limes, cut into wedges
  • ½ cup sour cream (or plain yogurt)

Instructions

  • In a bowl, mix 2 tbsp olive oil, lime juice, cumin, paprika, chili powder, cayenne, garlic powder, onion powder, salt, and pepper. Add chicken and marinate for at least 1 hour.
  • Heat a skillet over medium-high heat, add 1 tbsp olive oil, and cook chicken for 6-8 minutes per side until fully cooked (165°F internal temp).
  • Let the chicken rest for 5 minutes, then dice into bite-sized pieces.
  • Warm tortillas in a dry skillet for 30 seconds per side.
  • Assemble tacos: Fill tortillas with chicken, onion, cilantro, a squeeze of lime, and sour cream. Serve immediately.
