- 8 oz pasta (penne or rotini)
- 2 cups cooked chicken (grilled or shredded)
- 2 cups chopped romaine lettuce
- ½ cup shredded Parmesan cheese
- ½ cup croutons
For the Caesar Dressing:
- ½ cup mayonnaise (or Greek yogurt)
- ¼ cup grated Parmesan cheese
- 1 tbsp lemon juice
- 1 tsp Dijon mustard
- 1 garlic clove (minced)
- ½ tsp Worcestershire sauce
- ¼ tsp black pepper
Instructions
- Cook pasta according to package directions. Drain, rinse under cold water, and set aside.
- In a bowl, whisk together mayonnaise, Parmesan, lemon juice, Dijon, garlic, Worcestershire sauce, and black pepper until smooth.
- In a large bowl, combine pasta, chicken, romaine, Parmesan, and croutons.
- Drizzle with Caesar dressing and toss until evenly coated.
- Serve immediately or chill for 30 minutes for extra flavor.
Notes
- For extra crunch, add the croutons just before serving.
- Use whole wheat pasta for a healthier version.
