  • 8 oz pasta (penne or rotini)
  • 2 cups cooked chicken (grilled or shredded)
  • 2 cups chopped romaine lettuce
  • ½ cup shredded Parmesan cheese
  • ½ cup croutons

For the Caesar Dressing:

  • ½ cup mayonnaise (or Greek yogurt)
  • ¼ cup grated Parmesan cheese
  • 1 tbsp lemon juice
  • 1 tsp Dijon mustard
  • 1 garlic clove (minced)
  • ½ tsp Worcestershire sauce
  • ¼ tsp black pepper

Instructions

  • Cook pasta according to package directions. Drain, rinse under cold water, and set aside.
  • In a bowl, whisk together mayonnaise, Parmesan, lemon juice, Dijon, garlic, Worcestershire sauce, and black pepper until smooth.
  • In a large bowl, combine pasta, chicken, romaine, Parmesan, and croutons.
  • Drizzle with Caesar dressing and toss until evenly coated.
  • Serve immediately or chill for 30 minutes for extra flavor.
